Mixed Sprouts Pancakes

A quick-fix snack for a rainy day! Ensure that it is low in calories by using peanuts in the mentioned proportion, and restrict the use of oil to only ¼ tsp per pancake. Flavourful and easy to make, these pancakes are a perfect protein and calcium rich snack.

Ingredients



To be mixed together into a batter
1/2 cup rice flour (chawal ka atta)
1/4 cup peeled and grated potatoes
1 tbsp roasted and crushed peanuts
1/4 cup water
salt to taste

To be mixed together for the topping
1/2 cup boiled mixed sprouts (red chana, chawli, moong, rajma etc.), roughly chopped
2 tbsp chopped coriander (dhania)
2 green chillies, finely chopped

Other ingredients
2 1/2 tsp oil for cooking

Method

    How to proceed

    1. Divide the batter into 10 equal portions. Keep aside.
    2. Divide the topping mixture into 10 equal portions. Keep aside.
    3. Heat a non-stick tava (griddle) pour a portion of the batter on it and using a laddle spread it evenly into a 75 mm. (3") diameter circle.
    4. Spread a portion of the topping evenly over it.
    5. Cook using ¼ tsp of oil till both sides are golden brown in colour.
    6. Repeat with the remaining ingredients to make 9 more pancakes.
    7. Serve hot.
