Onions impart sweetness while lemon juice perks up the flavour of this piquant chutney. Mint and coriander provide vitamin A and C, making this an ideal accompaniment for your favourite snacks. Make the chutney in advance and store in the freezer for up to six days. Goes well with Soyabean Pancakes, or to make sandwiches such as the Club Sandwich.

Makes 1 (approx. 14 tbsp) cups

Ingredients


2 cups chopped mint leaves (phudina)
1 cup chopped coriander (dhania)
3/4 cup sliced onions
1 to 2 tbsp lemon juice
1 tsp sugar (optional)
2 to 3 green chillies
salt to taste

Method
  1. Combine all the ingredients and blend to a smooth paste in a mixer using very little water.
  2. Store refrigerated in an air-tight container and use as required.
