Mint Basil Granita

Ingredients

1 cup fresh basil leaves
2 cups fresh mint leaves (phudina)
3/4 cup sugar
2 tsp lemon juice

Method
  1. In a deep pan, combine the basil, mint, sugar and 4 cups water, mix well and cook on a medium flame, till the sugar is completely dissolved.
  2. Remove from the flame, cool slightly and blend in a mixer till smooth.
  3. Add the lemon juice and mix well.
  4. Transfer in a bowl and refrigerate for 2 hours.
  5. Remove and strain the mixture in ice-cube trays and keep in the freezer for an hour or till the mixture becomes slushy.
  6. Remove, break the crystals using a fork and freeze again for more 30 minutes.
  7. Scrape the mixture using a fork and serve immediately into pre-chilled glasses.
