A sumptuous snack that combines the best features of pav bhaji, vada pav and burgers, the Mini Pav Bhaji Burgers feature handy-sized burger buns stuffed with a potato and vegetable mix that is flavoured with tomatoes, onions and pav bhaji masala. When served in burger form, the ever popular bhaji-bun combo becomes easier to handle, qualifying these versatile burgers to be served as a starter, as an after-school treat for kids or a tea-time snack for the whole family.

For The Stuffing
1 tbsp butter
1/2 cup chopped onions
1/2 tsp garlic (lehsun) paste
1 cup boiled potato cubes
1 tbsp chopped capsicum
1/2 cup chopped tomatoes
1/2 tsp chilli powder
1/2 tsp pav bhaji masala
3/4 cup chopped and boiled mixed vegetables ( french beans , carrots and green peas)
2 tbsp chopped coriander (dhania)
1/2 tsp lemon juice
salt to taste

Other Ingredients
6 small round whole wheat burger buns
melted butter for brushing
6 onion rings

For the stuffing

  1. Heat the butter in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 30 seconds.
  2. Add the capsicum, tomatoes, chilli powder and pav bhaji masala and sauté on a medium flame for 1 minute.
  3. Add the potatoes, vegetables, coriander, lemon juice and salt and mash with a help of a potato masher and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

How to proceed

  1. Divide the stuffing into 6 equal portions and keep aside.
  2. Cut each burger bun horizontally into two. Apply little melted butter on the insides of each half of the burger bun and toast them lightly on a non-stick tava (griddle).
  3. Place the lower half of a bun on a clean, dry surface with the buttered side facing up.
  4. Place a portion of the stuffing on it and finally an onion ring.
  5. Place the upper half of the bun over it with the buttered side facing down and press it lightly.
  6. Epeat steps 3 to 5 to make 5 more mini burgers.
  7. Serve immediately.

Awesome, the girls loved it. The pav bhaji filling was perfect.
