Chilas are gram flour pancakes which originated in Rajasthan and which are sold there as roadside snacks. This recipe is of mini gram flour pancakes tossed in a blend of delectable chutneys. This chaat is delicious when served warm. You can also heat the chilas over a tava (griddle) and let your guests help themselves. Just sprinkle the sev before serving.

Ingredients



For the chilas
1 cup besan (Bengal gram flour)
a pinch of asafoetida (hing)
1 tsp chilli powder
salt to taste
oil for cooking

Other ingredients
4 spring onions, finely chopped
1/2 cup Khajur Imli ki Chutney
1/4 cup green chutney

For the garnish
1/4 cup Sev
2 tbsp chopped coriander (dhania)

Method

    For the chilas

    1. Mix the gram flour, asafoetida, chilli powder and salt with enough water to make a thin batter.
    2. Put about ½ teaspoon of the batter on a non-stick pan and cook with a little oil to make small chilas of about 12 mm. (½") diameter. Cook each chila on both sides until golden brown. The entire batter will make about 80 to 90 chilas.
    3. Remove and keep aside.

    How to proceed

    1. Just before serving, toss the prepared chilas with the spring onions, khajur imli ki chutney, green chutney and garnish with the sev and coriander.
    2. Serve immediately.
