This unusual foam is delicately flavoured with saffron.

Ingredients


750 ml milk
1/3 cup sugar
a pinch of saffron (kesar) strands
a pinch of cardamom (elaichi) powder
200 gms fresh cream

For decoration
powdered pistachios

Method
  1. Boil the milk for 20 to 25 minutes till it is reduced to half.
  2. Prepare the saffron by rubbing in a little warm milk.
  3. Add the sugar and prepared saffron and allow to cool. Add the cardamom powder.
  4. Chill thoroughly.
  5. When the milk is chilled, add the cream. Whip with an electric whipper and collect the foam in a serving bowl.
  6. Store the foam in the freezer compartment of a refrigerator. Put the balance milk to chill for at least 5 minutes.
  7. Repeat the process of beating and collecting foam until very little milk is left.
  8. Decorate the foam with grated pistachios and serve immediately.

Tips
  1. This dish is only suited for small parties.
  2. Variation : Shrikhand Souffle :
  3. Add cloud to shrikhand in the proportion of 1 to 3 by volume.
  4. And stir lightly to get a light and fluffy mixture like souffle.
