One of the healthy version of minestrone, whipped up in a jiffy with loads of fibre rich veggies and perked up with oregano and parsley. Fibre is known to control blood sugar levels and blood cholesterol levels, making this soup a healthy caution for one and all.

Ingredients

1 1/2 cups finely chopped carrots
2 tbsp finely chopped cauliflower
2 tbsp green peas
3/4 cup peeled and finely chopped potatoes
3 tbsp finely chopped cabbage
2 tbsp macaroni
1 1/2 tsp oil
2 tbsp chopped onions
2 bayleaf (tejpatta)
2 tbsp cornflour
2 tbsp chopped tomatoes
4 tbsp tomato puree
1 tsp dried oregano (optional)
salt and freshly ground black pepper powder to taste

To Serve
2 tbsp chopped parsley

Method
  1. Heat the oil in a deep non-stick pan, add the onions and bay leaves and sauté for 1 minute.
  2. Add the carrots, cauliflower, green peas and 5 cups of water and boil for 2 to 3 minutes.
  3. Add the potatoes, cabbage and macaroni and cook until the vegetables are tender.
  4. Mix the cornflour with ½ cup of water, add it to the soup and mix well.
  5. Add the tomatoes, tomato puree, oregano, salt and pepper, mix well and cook for a few more minutes.
  6. Serve hot garnished with parsley.
