Microwave Potato Wafers with Mango Salsa

The word snack immediately brings to mind potato wafers! Here's a microwave, version of potato wafers that you can dig into guiltlessly! You can also make baked veggie wafers using beetroots, carrots, sweet potatoes etc.

Ingredients



For the potato wafers
3 large sized potatoes, peeled
1/2 tsp chilli powder
salt to taste
oil for greasing

For the mango salsa (makes approx 1¼ cups)
1/2 cup chopped ripe mangoes
1/2 cup chopped tomatoes
1 tbsp chopped celery
2 tbsp chopped spring onions whites
1 tbsp chopped capsicum
1/2 tsp dry red chilli flakes (paprika)
salt to taste

Method

    For the potato wafers

    1. Cut the potatoes into about 4 mm. thick slices.
    2. Wash in cold water and dry thoroughly. Apply little chilli powder and salt to the potatoes on both sides.
    3. Arrange the potato slices on a greased microwave dish and microwave on HIGH for 5 to 6 minutes or until crisp. If you do not have a microwave, cook in a pre-heated oven at 160°C (320°F) till crisp.
    4. Allow to cool. Store in an air-tight container and use as required.

    For the mango salsa

    1. Mix the mangoes and tomatoes together in a bowl and lightly mash them with the back of a spoon.
    2. Add the remaining ingredients, mix well and let them marinate for at least one hour in the refrigerator.

    For serving

    1. Serve chilled mango salsa in a serving plate in the centre surrounded with the potato wafers.
