Mexican Fried Rice

Ingredients


For the rice
1 cup rice (chawal)
3 tbsp oil
salt to taste

Other ingredients
2 white onions , sliced
3 cloves of garlic (lehsun), crushed
1/4 tsp turmeric powder (haldi)
1 capsicum, sliced
1 tomato , chopped
3/4 cup mixed boiled vegetables
1 tsp chilli powder
6 tbsp oil
salt to taste

Method
For the rice

  1. Wash and soak the rice for 30 minutes. Drain.
  2. Fry the rice in the oil until light pink in colour.
  3. Add 3 cups of water and salt and cook until the rice is cooked.

How to proceed

  1. Heat the oil in a broad vessel and fry the onions until golden brown in colour. Add the garlic and fry for a few seconds. Add the turmeric powder and fry agian for a few seconds.
  2. Remove the onions and in the same oil, fry the capsicum for 1 minute.
  3. Add the tomato, vegetables, chiili powder and salt and cook for 1 minute.
  4. Add the fried onions and the cooked rice and mix well.
  5. Serve hot.
