Methiche varan, indulge in this low-cal but authentic maharashtrian dal loaded with methi leaves –rich in fibre, folic acid, vitamin a and iron. I have replaced sugar with jaggery which enhances the taste and the iron content.

Makes 4 servings


Ingredients

1 cup toovar (arhar) dal , soaked
for 20 minutes and drained
1/4 tsp turmeric powder (haldi)
salt to taste
2 tsp grated jaggery (gur) , optional
1/2 tsp chilli powder
1 tsp ghee
1/4 tsp asafoetida (hing)
4 to 5 cloves garlic
1 cup finely chopped fenugreek (methi) leaves

Method
  1. Combine the dal, turmeric powder, salt and 3 cups of hot water and pressure-cook for 3 to 4 whistles or till the dal is done.
  2. Allow the steam to escape before opening the lid.
  3. Whisk well, add ½ cup of water, jaggery and chilli powder, mix well and bring to boil.
  4. For the tempering, heat the ghee in a small non-stick pan and add the asafoetida and garlic and sauté on a medium flame till the garlic turns light brown in colour.
  5. Add the fenugreek leaves and sauté on a medium flame for another 2 minutes.
  6. Pour this tempering over the boiling dal and mix well. Serve hot.
