Thick, hot and spicy flavoured with mint and coriander is all i can say about this soup. It is sure to free you from nose blocks and help to overcome the cold.

Ingredients


4 1/2 cups clear vegetable stock or water
2 tbsp finely chopped tomatoes
2 tbsp finely chopped capsicum
2 tbsp finely chopped cauliflower
2 tbsp finely chopped carrots
2 tbsp finely chopped cabbage
1 tbsp fresh mint leaves (phudina) , finely chopped
1 tbsp chopped coriander (dhania)
2 tsp finely chopped garlic (lehsun)
2 tsp chopped ginger (adrak)
3 tsp soy sauce
2 tbsp cornflour mixed in 1/2 cup water
1 tbsp oil
salt and to taste

For The Topping
chilli oil
chopped coriander (dhania) (dhania)

For Serving
soy sauce

Method
  1. Heat the oil in a wok over a high flame. Add the garlic, ginger, vegetables and stir-fry for 2 to 3 minutes over a high flame.
  2. Add the stock, mint, coriander, soya sauce, salt and pepper.
  3. Add the cornflour paste to the soup and boil for 1 minute. Top with the chilli oil and coriander.
  4. Serve hot with soy sauce.
