Ingredients

100 gms noodles
1 carrot , cut into long strips
1 onion , sliced
1 cucumber , sliced
1 capsicum , sliced lengthwise
a few spinach (palak) leaves
1/2 tsp sugar
3 tbsp refined oil
salt to taste

To Be Ground Into A Paste
4 cloves (laung / lavang) of garlic (lehsun)
4 red chillies

To Serve
2 tsp chilli oil
a few cucumber slices
chopped spring onions

Method
How to proceed

  1. Heat the remaining 1 1/2 tablespoons of oil and fry the paste for a few minutes.
  2. Add the carrot, onion, cucumber, spinach stems and fry again for 2 minutes.
  3. Add the fried vegetables, sugar and salt to the fried noodles and mix well.
  4. Top with the chilli oil, surround with cucumber slices, sprinkle chopped spring onions on top and serve hot.

For the noodles

  1. Boil the noodles.
  2. Heat 1 1/2 tablespoons of oil and fry the boiled noodles.
