A pesto flavoured creamy corn sauce topped with roasted bell peppers makes this a great combination.

Ingredients


1 recipe Basic Pizza Base
butter or oil for greasing

To be mixed into a Corn Pesto sauce
1 cup (225 grams) cream style corn , canned
3 tbsp Pesto
salt to taste

For the topping
1 yellow pepper
1 red pepper
1 tbsp olive oil or oil
salt to taste

For baking
1 cup cooking cheese or mozzarella cheese ,grated

Method
  1. For the topping
  2. Lightly grease both the peppers with the olive oil and roast over an open flame till the skin is browned evenly. Cool completely.
  3. Peel the skin off the roasted peppers and cut into thin strips.
  4. Sprinkle salt and keep aside.

How to proceed

  1. Place one pizza base on a greased baking tray.
  2. Spread half the Corn Pesto sauce over the base.
  3. Top with half the roasted bell peppers.
  4. Sprinkle half of the cheese on top.
  5. Bake in a preheated oven at 200°C (400°F) for 10 to 15 minutes or till the base is evenly browned.
  6. Make another pizza using the other pizza base and the remaining ingredeints.
  7. Serve hot.
