Matri is a deep fried Punjabi snack recipe made from maida, oil and salt. These mathris are great when enjoyed with pickle or aloo ki subzi.

Ingredients


Ingredients
1 cup plain flour (maida)
1 tbsp ghee or oil
salt to taste
2 to 3 pinches of baking soda
1/4 tsp carom seeds (ajwain)
warm water for kneading
oil for deep-frying

Method

  1. Method
  2. Mix all ingredients, except oil for deep frying and water.
  3. Add water little by little kneading into a pliable dough.
  4. Cover and keep for 15 minutes.
  5. Break into small portions, roll in 1" wide rounds.
  6. Keep a little thicker than puris. prick with a fork.
  7. Place on a clean spread out cloth.
  8. Finish for all dough.
  9. Heat oil in a frying pan, add some matri at a time.
  10. Fry till lightly golden, flip side and repeat.
  11. Drain and cool to allow to become crisp.
  12. Store in an airtight container.
