Masala roti, the unique flavour of this roti is crafted by the jeera and pepper along with the potatoes, which also adds softness to the roti. The potatoes and maida also aid in binding. Relish this delight with a vegetable of your choice.

Ingredients

2 cups arrowroot (paniphal) flour flour
1/2 cup plain flour (maida)
1 cup boiled , peeled and mashed potatoes
salt to taste
1/2 tsp coarsely ground cumin seeds (jeera)
1 tbsp finely chopped coriander (dhania)
1 tbsp oil

Other Ingredients
plain flour (maida) for rolling
oil for cooking

Method
  1. Combine the arrowroot flour, plain flour, potatoes, salt, cumin seeds, pepper, coriander and 2½ tsp of oil together in a bowl and mix well.
  2. Knead into a soft dough adding enough water. Cover and keep aside for 5 minutes.
  3. Knead again using the remaining ½ tsp of oil and divide it into 10 equal portions.
  4. Roll out each portion into 75 mm. (3") diameter circle using a little flour for rolling.
  5. Cook on a hot tava (griddle), using a little oil, till both sides turn golden brown in colour.
  6. Repeat with the remaining dough to make 9 more rotis. Serve hot with curds.

Handy tip

  1. If you find difficulty in rolling the rotis, roll them between 2 greased sheets of plastic.
