Pieces of chilled King Alphonso pureed with sugar and cream and set in the freezer.

Ingredients


6 large ripe Alphonso mangoes, peeled
8 tbsp powdered sugar
500 gms cream, chilled

Method
  1. Cut half the mangoes into small cubes and puree the other half. Mix and keep aside.
  2. Whip the cream and the sugar till thick.
  3. Combine the mangoes (puree and chopped pieces) with the whipped cream.
  4. Pour the mixture into an aluminium container and freeze.
  5. It is not necessary to beat this ice-cream again as the texture is smooth and velvety.

Tips
  1. All ingredients should be chilled before mixing so that they set together thus avoiding crystallization.
  2. Ice-cream sets best and quickest in aluminium containers, covered with aluminium foil.
