Ingredients

Method
  1. Combine the maize flour and sour curds with ½ cup of warm water in a bowl and mix well to make a smooth batter. Keep aside for at least 30 minutes.
  2. Add the sweet corn, ginger-green chilli paste, asafoetida, sugar, lemon juice and oil and mix well.
  3. Add the fruit salt, mix gently and pour the batter into a greased 150 mm. (6") diameter thali. Steam for 15 to 20 minutes. Keep aside.
  4. For the tempering, heat the oil in a pan and add the mustard seeds and sesame seeds.
  5. When the seeds crackle, add the asafoetida and stir for 10 seconds.
  6. Pour the tempering over the prepared dhokla.
  7. Cool slightly and cut into small diamond shaped pieces. Serve hot garnished with coriander.

Handy tips

  1. Always use your hands while mixing the batter to break the lumps.
  2. Add the fruit salt just before you steam the dhoklas.
  3. Ensure that the water in the steamer is boiling before you put the dhokla batter to steam as it cooks faster and the dhoklas rise well.
