Rabri is a sweetmeat eaten on festive Occasion in North India. Presenting its low fat version.

Ingredients

1 ltr low fat milk
175 gms sweet potatoes , peeled and grated
150 gms sugar
a few saffron (kesar) strands
1 1/2 tbsp warm water
2 cardamoms (elaichi) , powdered
2 almonds (badam) , blanched and
2 blanched and sliced pistachios

Method
  1. Boil the milk, add the sweet potatoes and continue cooking until they are tender. Add the sugar and continue cooking for 2 minutes. Remove from the heat and allow to cool.
  2. Put the safforn into a cup with the warm water and rub until it dissolves. Add to the milk mixture. Add the cardamom powder and chill thoroughly for at least 1 hour.
  3. Just before serving, sprinkle the almonds and pistachio slices on top. Serve cold.
