Ingredients


1 cup Thai vegetable stock, recipe below
1 green chilli, slit
1/4 cup sliced carrots
1/4 cup cabbage cubes
1/4 cup sliced spring onions whites
1/4 cup sliced mushrooms (khumbh)
2 tbsp chopped spring onion greens
1 tsp oil
salt and pepper to taste

For the Thai vegetable stock
1 1/2 cups water
3 peppercorns
1/2 cup chopped onions
1 cup chopped carrots
1 lemon grass stalk (hare chai ki patti), chopped
salt to taste

For the garnish
1 tbsp chopped coriander (dhania)
1 tsp lemon juice

Method

    For the Thai vegetable stock

    1. Combine all the ingredients in a deep-bottomed pan and simmer for about 10 to 15 minutes till the vegetables release their flavours.
    2. Strain and keep the liquid aside. Discard the vegetables.

    How to proceed

    1. Heat the oil in a pan and add the green chillies. Sauté for a few seconds and then discard the chillies.
    2. Add the carrots, cabbage and spring onion whites and sauté for 1 to 2 minutes.
    3. Add the mushrooms, Thai vegetable stock, salt and pepper and bring to boil
    4. Simmer till the vegetables are tender.
    5. Add the spring onion greens and serve hot garnished with coriander and lemon juice.
