do not throw skin of lemon make achar
1 lemon ginger sharbet
3.bharvein karele amritsari
4.karele ki chill (veg)
6.raw mango squash
7.bread kheer kati
9. lemon skin achar
- Before you start preparing squash ,boil bottles on one side of gas
- 1. put sugar in vessel ,cover with water ,1” above sugar level
- 2. boil on low fire till sugar dissolves
- 3. in boiling syrup put citric acid , it will clean sugar syrup ,enhances taste
- 4. remove foth dirty sugar
- 5. if syrup is sticky ,add lemon juice ,bring to boil on low fire ,check if it is sticky
- 6. put off fire ,dissolve sodium benzoit in hot syrup ,mix in squash
- 7. add essence , color
- 8. bottle ,boiling syrup in boiling bottel ,keep 2” space vacant in bottle so it does not burst
- 9. cap bottles tightly
- 10. when want to serve ,pour 2-3 table spoon of syrup in glass ,pour chilled water & ice cubes ,serve
