Method
  1. Beat the eggs well.
  2. Put the butter, sugar, lemon juice and grated rind in a double boiler or in a small vessel over hot water.
  3. Heat thoroughly, then add the beaten eggs.
  4. Continue stirring until the mixture coats the back of a wooden spoon.
  5. Cool and use as required.
