- Beat the eggs well.
- Put the butter, sugar, lemon juice and grated rind in a double boiler or in a small vessel over hot water.
- Heat thoroughly, then add the beaten eggs.
- Continue stirring until the mixture coats the back of a wooden spoon.
- Cool and use as required.
