Ingredients


1 packet (100 grams) lemon jelly
1 tsp instant coffee powder
200 gms (7 oz.) fresh cream
3 tbsp powdered sugar
crushed marie biscuit

Method
  1. Dissolve the jelly in 2 teacups of boiling water.
  2. Cool. Pour 2 tablespoons of the jelly into a mould and put to set in the refrigerator.
  3. Add the coffee to the remaining jelly, pour into a broad vessel and put to set partially in the refrigerator.
  4. Beat the cream with the sugar until thick. Mix with the semi-set jelly and pour into the mould tin over the set lemon jelly. Put once again to set in the refrigerator.
  5. Just before serving, dip the mould in hot water for a few seconds, loosen the sides and unmould on a plate.
  6. Sprinkle crushed Marie biscuits on top and serve cold.
