Would you believe it if I said kofta can be prepared without deep frying? Kofta can be prepared in the microwave without frying, and they taste just as good as the original! Enjoy these soft kofta made with potatoes, spinach and fenugreek leaves and ensure good health.

For the koftas
1/2 cup cooked and mashed potatoes
1 tbsp chopped coriander (dhania)
1 tbsp chopped fenugreek (methi) leaves
1 tbsp chopped spinach (palak)
1 tsp lemon juice
1 tsp finely chopped green chillies
1/2 tsp cornflour
2 tbsp milk
salt to taste

To be ground to a smooth paste
1/2 tbsp poppy seeds (khus-khus)
1 tbsp cashewnuts (kaju)
2 green chillies
1 tbsp water

For the curry
2 tbsp onion paste
1/2 tsp ginger-garlic (adrak-lehsun) paste
1/4 cup curds (dahi)
1/4 cup milk
1/2 tsp cornflour mixed with 2 teaspoons water
a pinch of turmeric powder (haldi)
2 tsp oil
salt to taste

For the garnish
2 tbsp chopped coriander (dhania)


    For the koftas

    1. Combine all the ingredients in a bowl and mix well to form a soft dough.
    2. Divide the dough into 8 equal portions and place them on a microwave-proof plate and microwave on HIGH for 30 seconds. Keep aside.

    For the curry

    1. Combine the oil, onion paste and ginger-garlic paste in a microwave-proof bowl and microwave on HIGH for 2 minutes.
    2. Add the prepared paste, mix well and microwave on HIGH for 1 minute.
    3. Add the curds, milk, cornflour mixture, turmeric powder and salt, mix well and microwave on HIGH for 1 minute.

    How to proceed

    1. Combine the curry and the koftas and microwave on HIGH for 1 minute.
    2. Serve immediately garnished with coriander.
