  1. Place the tomato on a shallow glass dish. Microwave on HIGH for 2 minutes.
  2. Cool slightly, peel and puree in a liquidiser till smooth.
  3. Combine the oil, grated onion and ginger-garlicpaste in a glass bowl and microwave on HIGH for 1 minute.
  4. Add the tomato puree and microwave on HIGH for 2 minutes.
  5. Add all the other ingredients and mix well. Microwave on HIGH for 3 minutes.
  6. Serve hot, garnished with the chopped coriander.

nice dish! packed with flavours, the herbs season the dish perfectly. relish with rotis!
