Khichia papad, a healthy snack that can be easily made at home too! all you need is papads of your choice, although the road-side vendors use the traditional khichia papad, made with rice. Roast the papads on an open flame and top with ingredients of your choice.

Makes 4 papads


Ingredients

4 khichia papad
(readily available in the market)
4 tsp melted butter
8 tbsp finely shredded cabbage
8 tbsp finely chopped onions
8 tbsp finely chopped cucumber
8 tbsp finely chopped tomatoes
salt to taste
6 tsp tomato chutney , recipe below
4 tsp teekha chutney

To Be Blended Together Into Tomato Garlic Chutney
2 medium sized tomatoes , roughly chopped
2 tbsp roughly chopped garlic (lehsun)
2 tbsp roughly chopped green chillies
salt to taste
1/4 cup of water

For The Garnish
4 tbsp nylon sev

Method
  1. Roast a papad on an open flame till it is crisp and has light brown spots on both sides.
  2. Place it on a serving plate, apply 1 tsp of butter evenly on it and break roughly to get large pieces.
  3. Sprinkle 2 tbsp each of cabbage, onions, cucumber, tomatoes and salt evenly over it.
  4. Top with 1½ tsp of tomato garlic chutney and 1 tsp of teekha chutney and serve immediately garnished with 1 tbsp of sev.
  5. Repeat with the remaining ingredients to make 3 more khichia papads.

Variation:

  1. Jain khichia papad: for a jain variation, replace the onions with an equal quantity of finely-shredded cabbage. While making tomato chutney, skip the garlic. However, to enhance its flavour, replace garlic with an equal amount of ginger.
