A simple stew of yam, cucumber and potatoes served with curds, chutney and fried potato straws.

Serves 4 to 6.


Ingredients


2 cups yam (suran) cubes
2 cups cucumber cubes
2 cups potato cubes
1/2 cup peanuts
1 tbsp ghee
salt to taste

To be ground into a coconut chutney
3/4 cup coconut
3 green chillies, chopped
1 tsp grated ginger (adrak)
1 tsp lemon juice
salt to taste

For the serving
1 cup curds (dahi)
1 cup fried potato straws
Coconut Chutney

Other ingredients
2 tbsp chopped coriander (dhania)

Method
  1. Combine the yam, cucumber, potato, peanut, ghee and salt in a handi.
  2. Add 4 cups of water and simmer till the vegetables are well cooked.
  3. Add half the coconut chutney and mix well.
  4. How to proceed
  5. Pour some of the stew in individual bowls, top with some curds and chutney and sprinkle some potato straws on top. Serve immediately.
