A sweet and sour rice preparation made using left over rice.

  1. Heat the oil in a kadhai, add the bay leaves, cardamoms,asafoetida, cumins seeds and fennel seeds and saute till the the cardamons become golden brown in colour and a sweet aroma comes out.
  2. Add the boiled mango, salt, sugar and pepper powder, mix well and cook for a minute, while stirring continuously.
  3. Add the steamed rice, mix well and cook for a minute.
  4. Garnish with mint leaves and serve hot.
