A colourful Gujarati vegetable with the taste of crunchy peanuts.
- Cut the kand into long stirps. Steam until soft.
- Heat the oil in a tava and fry the cumin seeds until they crackle.
- Add the asafoetida and green chillies and fry for a while. Add the peanuts, kand, salt and the lemon juice. Mix well.
- Serve hot, topped with the coriander.
