Kaddu ki kheer is a sweet preparation made by cooking together the grated kaddu or white pumpkin with milk and sugar. Relish the kheer with chopped nuts and raisins as garnish.

1 medium red pumpkin (bhopla / kaddu) , peeled and grated
500 ml milk
4 tbsp ghee
3 cardamoms , powdered
8 almonds (badam) , sliced
8 cashewnuts (kaju) , chopped
16 chirongi nuts (charoli)
4 tbsp mava (khoya) , grated
sugar to taste

  1. In a deep pan, boil the milk till it becomes half and turns into cream colour.
  2. In another pan, heat the ghee and add the nuts and saute for 2 minutes.
  3. Add the grated pumpkin and saute for 15 minutes or till the raw smell goes off.
  4. Add the milk and sugar and mava, mix well and simmer for 10 minutes.
  5. Remove, cool and keep it in the refrigerator.
  6. Serve chilled.
