What a yummy breakfast this is! a variant of the traditional handva, this savoury cake uses idli batter to reduce the preparation time. Cooking it using the microwave shrinks the cooking time further, in all making this a super-quick delicacy.

Makes 4 servings


Ingredients

1/2 tsp oil for greasing
3/4 cup idli batter , readily available in the market
2 tbsp finely chopped coriander (dhania)
1 tbsp curds (dahi)
salt to taste
1 tbsp oil
1 tsp mustard seeds ( rai / sarson) (rai / sarson)
1 tsp cumin seeds (jeera)
1 tsp fruit salt

Method
  1. Grease a 175 mm. (7”) dish with oil and keep aside.
  2. Combine the idli batter, coriander, curds and salt in a bowl, mix gently and keep aside.
  3. Put the oil in a microwave-safe bowl and microwave on high for 30 seconds.
  4. Add the mustard seeds and cumin seeds and microwave on high for 1 minute. Keep aside.
  5. Add the fruit salt to the prepared batter and mix gently.
  6. Pour the tempering on top and microwave on high for 3 minutes.
  7. Cut into equal-sized pieces and serve immediately.
