Hurry Curry With Potato Cakes

Ingredients



For the bean curry
1/3 cup rangoon vaal (lilva beans/double beans)
1/3 cup red rajma (kidney beans)
1/2 teacup black-eyed beans (optional)
1 kg tomatoes
1 onion, chopped
1 green chilli, slit
2 to 3 tsp sugar
1 tsp chilli powder
1 tbsp oil
salt to taste

For the potaot cakes
4 potatoes, boiled and mashed
1 tbsp cashewnuts (kaju) or peanuts
3 to 4 green chillies, chopped
1 tbsp chopped coriander (dhania)
1 tsp lemon juice
2 fresh bread slices
salt to taste

Method
  1. For the bean curry, soak the broad beans, kidney beans and black eyed beans overnight.
  2. Next day, cook the beans in a pressure cooker. Drain the water.
  3. Cut the tomatoes into big pieces, add 2 tablespoons of water and cook.
  4. When cooked, take out a soup by passing through a sieve.
  5. Heat the oil and fry the onion for 1 minute.
  6. Add the tomato soup, chilli, sugar, chilli powder, salt and the beans.
  7. Boil for at least 10 to 15 minutes.
  8. For the potato cakes, dip the bread slices in water for 1 minute. Squeeze out the water and crumble the bread.
  9. Mix the crumbled bread and the remaining ingredients.
  10. Shape into small balls, flatten slightly.
  11. Cook on a non-stick pan or tawa (griddle) using a little oil.
  12. Just before serving, add the potato cakes to the bean curry. Serve hot.
