High Protein Moongdal Chilas

A chila is a pancake unique to the desert province of Rajasthan.

Makes 15 large chilas.


Ingredients



For the chilas
1 1/2 cups moong dal (split green gram) with skin
4 green chillies, chopped
a pinch asafoetida (hing)
salt to taste
oil for cooking

For the stuffing
2 boiled potatoes, cut into cubes
1 teacup steamed green peas
1 tsp cumin seeds (jeera)
2 green chillies, chopped
1 to 2 tablespoons amchur powder
1 tbsp oil
salt to taste

For the serving
Green Chutney
Sweet Chutney

Method
  1. For the chilas, soak the moong dal for at least 3 hours.
  2. Add the green chillies and 1 teacup of water and grind in a blender.
  3. Add the asafoetida and salt.
  4. For the stuffing, heat the oil and fry the cumin seeds until they crackle.
  5. Add the remaining ingredients and cook for a few minutes. Mash.
  6. To proceed, spread a little moong dal mixture on a hot frying pan (preferably non-stick) of about 125 mm. diameter. Smear a little oil around the mixture and cook for a few seconds. Turn over and cook the other side till light brown.
  7. Put some stuffing in the centre. Fold.
  8. Repeat for the remaining mixture.
  9. Serve hot with green and sweet chutneys.
