Herbed Pizza Strips ( Italian Recipe)

This style of flat bread is eaten all around the mediterranean regions. Freshly made bread is rolled out and cut into thick strips, brushed generously with olive oil, flavoured with plenty of garlic and just the right amount of herbs sprinkled on top. Baked in the oven till the crust is crisp and golden brown on the outside and soft and chewy inside. Leftover scraps of pizza dough can be used for this recipe. It is best when freshly baked, while still warm and fragrant to eat as a snack or to go with a meal.

Makes 2 cups


Ingredients

1/2 recipe basic pizza base

To Be Mixed Into A Herb Topping
3 tsp olive oil or oil
1 tsp garlic (lehsun) paste
1 tsp dried mixed herbs
1/2 tsp crushed pepper
salt to taste

Other Ingredients
olive oil or oil for greasing and glazing

Method
  1. Place the pizza base on a greased baking tray.
  2. Using a pastry brush, brush the herb topping on top of the pizza base.
  3. Cut the pizza base into 75 mm. X 37 mm. (3" x 1½ ") thick strips using a sharp knife or a dough cutter. Prick with a fork at regular intervals.
  4. Bake in a pre-heated oven at 220°c (440°f) for 10 to 15 minutes or till the base is evenly browned.
  5. Glaze the hot pizza strips with olive oil.
  6. Warm the pizza strips in an oven before serving and serve with soup of your choice.

Excellent recipe! I made this and my family loved it. It is really good with pasta. Every time I make it, there is never any left over. That is how great it is. Highly recommended.
