The herbal lentil soup is a light soup that has pressure-cooked moong dal as the base stock with corn flour imparting an extra thickness. The soup is mildly flavoured with herbs like celery and dill that are sautéed in butter to release their fragrance. A sprinkling of fresh pepper and salt, and this soup is ready to serve. An ideal comfort food, this one!

Ingredients


For The Stock
1/4 cup yellow moong dal (split yellow gram)
1/4 cup roughly chopped onions
1/4 cup roughly chopped potatoes

Other Ingredients
1 tbsp butter
1/4 cup finely chopped onions
1 tbsp chopped celery (ajmoda)
2 tbsp chopped dill leaves
(shepu / suva bhaji) or parsley
salt and pepper to taste
3 tsp cornflour dissolved in 3/4 cup of water

Method
For the stock

  1. Combine the moong dal, onions and potatoes along with 4 cups of water and pressure cook for 3 to 4 whistles.
  2. Allow the steam to escape before opening the lid.
  3. Blend in a mixer till smooth and strain using a strainer. Keep aside.

How to proceed

  1. Heat the butter in a deep non-stick pan, add the onions and celery and sauté on a medium flame for a minute.
  2. Add the stock, bring to boil and cook on a slow flame for another 2 to 3 minutes.
  3. Add the dill leaves, salt, pepper and cornflour mixture, mix well and simmer for 2 to 3 minutes, while stirring continuously.
  4. Serve hot.
