Herb Cottage Cheese

Cottage cheese finds widespread use among Indian households. It is cooked along with herbs and vegetables.

Ingredients


2 ltrs milk
2 teacups yoghurt
3 tsp salt, leveled
3 tbsp finely chopped dill (shepu / suva bhaji) or parsley

Method
  1. Put the milk to boil.
  2. Mix the yoghurt and salt very well.
  3. When the milk starts boiling, add the yoghurt mixture and switch off the gas. Cover the vessel and wait for 10 minutes.
  4. Strain the mixture.
  5. Add 2 tablespoons of dill and mix well.
  6. Place the cottage cheese in a small perforated tin (or a thin muslin bag) and put a weight on top. Allow the water to drain off for two hours.
  7. Sprinkle the remaining dill on top.
  8. Cut into slices and serve.
