Hara bhara pancake

This dish is vegan but non vegetarians can add egg to their pancake batter

10 leaves spinach
1/2 cup cut mushrooms
1/2 cup tomato sauce
1/2 cup maida batter with 1and 1/2 cup water
grated cheese
seasoning-salt,pepper,oregano,chilli flakes


  1. Boil and puree spinach
  2. Heat oil in a pan
  3. Spread maida batter and make puree size pancakes cook on both sides
  4. Fry mushrooms on remaining oil for a minute
  5. Pour tomato sauce on a oven proof dish
  6. Place pancakes and spread spinach puree and add seasoning
  7. Sprinkle mushrooms and add grated cheese
  8. Add seasoning
  9. Fold the pancake
  10. Bake on convection grill at 200 c for 10 minutes till cheese melts
