This delectable rice dish is best served in an earthen pot, which preserves the subtle flavours and goodness of the vegetables. Lightly spiced, the rice is a great way to get you a delicious and healthy treat.

1 1/2 cups rice (chawal)
1 cup cauliflower florets
3/4 cup potato cubes
1/2 cup green peas
3/4 cup chopped onions
1/4 cup chopped coriander (dhania)
1/2 tsp turmeric powder (haldi)
4 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp chilli powder
1 tsp garam masala
2 tbsp oil
salt to taste

To Be Ground Into A Paste
4 tbsp freshly grated coconut
4 green chillies , roughly chopped
25 of ginger (adrak) , roughly chopped
7 garlic (lehsun) cloves , roughly chopped
2 tbsp water

For The Garnish
2 tbsp chopped coriander (dhania)

  1. Combine the onions, coriander, turmeric powder, coriander-cumin seed powder, chilli powder, garam masala, ground paste, oil and salt in a bowl and mix well.
  2. Add the rice, cauliflower, potatoes, peas to this mixture and mix gently.
  3. Transfer this mixture into a handi (big pot), add 4 cups of water, cover and cook for approx. 25 to 30 minutes until the rice and vegetables are cooked. Stir at regular intervals.
  4. Serve hot garnished with coriander.
