This delectable rice dish is best served in an earthen pot, which preserves the subtle flavours and goodness of the vegetables. Lightly spiced, the rice is a great way to get you a delicious and healthy treat.
- Combine the onions, coriander, turmeric powder, coriander-cumin seed powder, chilli powder, garam masala, ground paste, oil and salt in a bowl and mix well.
- Add the rice, cauliflower, potatoes, peas to this mixture and mix gently.
- Transfer this mixture into a handi (big pot), add 4 cups of water, cover and cook for approx. 25 to 30 minutes until the rice and vegetables are cooked. Stir at regular intervals.
- Serve hot garnished with coriander.
