GUILT-FREE DESSERTS

Continuing our series on guilt-free recipes, we focus on yummy low-calorie desserts this time. Remember however that moderation is the key, so don’t go overboard no matter how tempting the results!

ORANGE KHEER

This healthy version of a famous Bengali dessert features orange segments instead of rice, and sugar substitute instead of sugar, mixed in delicately flavoured milk.

Preparation time: 15 minutes.
Cooking time: 25 minutes.
Serves 4.

1 cup small orange segments
1 litre low-fat milk (99.7% fat-free)
2 tbsp corn flour dissolved in 2 tbsp warm low-fat milk
½ tsp cardamom (elaichi) powder
A pinch of saffron (kesar) strands dissolved in ½ tsp warm milk
4 tsp sugar substitute

  1. Boil the milk in a broad non-stick pan for 15 to 20 minutes, stirring continuously and scraping the sides of the pan to ensure it doesn’t stick.
  2. Add the corn flour-milk mixture and cook on a medium flame for 4 to 5 minutes, stirring continuously.
  3. Add the cardamom powder and the saffron-milk mixture. Mix well and cook on a medium flame for 1 minute.
  4. Remove from the flame and allow the mixture to cool completely.
  5. Once cooled, add the sugar substitute and the orange segments and mix well.
  6. Refrigerate and serve chilled.
