Green Salsa

Green salsa is a mexican classic. The cooked green tomatoes with green chillies have a lovely sourness to it when vinegar is added. Toss in large quantities with your tortillas and add refried beans.

Preparation Time:    Cooking Time:     Makes 0.75 cup

  1. Cut the tomatoes into big pieces.
  2. Combine the tomatoes, onion, green chillies and 1/2 teacup water in a pan and cook on a medium flame till the tomatoes are soft.
  3. When cooked remove from the flame allow to cool and blend in a liquidiser and strain.
  4. Add the vinegar and salt, mix well and use as required.

Course, crunchy and goes great with tortillas. Nice subtle sourness to the salsa with a tinge of garlic and pleasant taste of spring onions. Very healthy.The Green Tomato Salsa can be used as an ideal accompaniment for a starter or tossed in large chunks into your tortillas.
