Green salsa is a mexican classic. The cooked green tomatoes with green chillies have a lovely sourness to it when vinegar is added. Toss in large quantities with your tortillas and add refried beans.
- Cut the tomatoes into big pieces.
- Combine the tomatoes, onion, green chillies and 1/2 teacup water in a pan and cook on a medium flame till the tomatoes are soft.
- When cooked remove from the flame allow to cool and blend in a liquidiser and strain.
- Add the vinegar and salt, mix well and use as required.
