Just a sprig of coriander is enough to pep up a dish. Imagine a recipe that is characterised mainly by coriander—colour, flavour, et al! the coriander paste is what imparts a pleasant, green colour to this spicy pulao. The pulao by itself is so flavourful that all you need is a simple kadhi, raita or curds to go with it. If you are not fond of very spicy food, go easy on the chillies without any qualms… it will not compromise the taste in any way!

Ingredients


To Be Ground Into A Paste
1 1/2 cups coriander (dhania)
5 green chillies
25 mm (1") piece ginger (adrak)
10 garlic (lehsun) cloves

Other Ingredients
4 tbsp ghee
1 cup chopped onions
25 mm (1") piece cinnamon (dalchini)
2 cloves (laung / lavang)
2 cardamoms
2 bay leaves (tejpatta)
3/4 cup long grained rice , cleaned and washed
2 cups cauliflower florets
1 1/3 cups green peas
1 cup small potatoes
salt to taste

For Serving
fresh curd/ kadhi

Method
  1. Put the ghee in a microwave safe bowl and microwave on high for 30 seconds.
  2. Add the onions, mix well and microwave on high for 1½ minutes, stirring once in between after 45 seconds.
  3. Add the prepared paste, mix well and microwave on high for 2 minutes, stirring once in between after 1 minute.
  4. Add the cinnamon, cloves, cardamom and bay leaves, mix well and microwave on high for 1 minute.
  5. Add the rice, cauliflower, green peas, potatoes, salt and 2 cups of water and mix well. Cover and microwave on high for 18 minutes or until the water is absorbed and the vegetables are cooked, stirring twice in between after every 6 minutes.
  6. Serve immediately with curds or kadhi.
