Green peas soup is pleasant variation by cooking fresh peas in chinese style. This is a thick, hearty soup, so a simple chinese main course should suffice. Other vegetables like cabbage, cauliflower and carrots are also added to give it a variety of textures and flavors. Corn starch acts as a thickening agent while the sauces and freshly ground pepper help recreate an authentic chinese flavor. Try it when fresh peas are in season, this creamy soup will please your loved ones.

Makes 6 servings


Ingredients

2 tbsp oil
3/4 cup blanched green peas
1/3 cup finely chopped cabbage
1/3 cup finely chopped cauliflower
1/3 cup finely chopped carrots
4 1/2 cups clear vegetable stock
2 pinches sugar
salt and to taste
1 tsp soy sauce
3 tbsp cornflour

For Serving
soy sauce
chillies in vinegar
chilli sauce

Method
  1. Heat the oil in a wok / kadhai on a high flame till it smokes.
  2. Add all the vegetables and sauté on a high flame for 3 to 4 minutes.
  3. Add the vegetable stock, sugar, salt and pepper and mix well.
  4. Combine the soya sauce and cornflour in ½ cup of water and mix well.
  5. Add the mixture to the soup, mix well and cook on a high flame for 2 to 3 minutes, while stirring continuously.
  6. Serve hot with chillies in vinegar, soya sauce and chilli sauce.
