Ingredients



For the green peas mixture
3 cups green peas
5 green chillies, finely chopped
2 pinches soda bi-carb
2 tbsp lemon juice
1 1/2 tsp (approx.) sugar
3 tsp oil
salt to taste

For the paneer balls
150 gms grated paneer (cottage cheese)
1/4 tsp green chillies
1 tsp levelled, cornflour
salt to taste

For the potato puris
5 potatoes, boiled and mashed
4 green chillies, finely chopped
1/4 tsp turmeric powder (haldi)
1 1/2 tsp sugar
salt to taste
3 tsp oil

For cooking
3/4 cup levelled, plain flour (maida)
bread crumbs
oil for deep-frying

For serving
tomato ketchup

Method

    For the green peas mixture

    1. Mash the green peas with the green chillies.
    2. Heat the oil, add the green peas mixture, soda bi-carb, lemon juice, sugar and salt and cook for 2 minutes.
    3. Cool.

    For the paneer balls

    1. Mash the paneer with the green chillies, cornflour and salt.
    2. Shape into small round balls.

    For the potato puris

    1. Mash the potatoes with the green chillies. Add the turmeric powder, sugar and salt and mix well.
    2. Heat the oil, add the potato mixture and cook for 1 minute.
    3. Cool. Divide the mixture into 6 portions.
    4. Roll out each portion into a thin round of about 100 mm. diameter.

    How to proceed

    1. Put a paneer ball in each potato round and fold to cover the paneer ball completely.
    2. Cover the paneer potato puri balls with the green peas mixture. Press very well.
    3. Mix the flour in 1 1/2 teacups of water. Dip the balls in this mixture. Roll into bread crumbs and deep fry in hot oil.
    4. Cut each balls into two and serve hot with tomato sauce.

    These are a great combination of green peas, potatoes and paneer. they are crunchy from outside and soft from inside...worth a try !
