Green Peas Panki ( Non- Fried Snacks )

Green pea panki is a popular gujarati snack made of a rice flour batter that is cooked between 2 banana leaves. Green peas added to the panki batter make it look more appealing and enhance its fibre value. Serve these steamed hot pankis with the spicy phudina chutney.

Ingredients

1/3 cup rice flour (chawal ka atta)
1 tbsp urad dal (split black lentil) flour
1 tsp curds (dahi)
1 to 2 green chillies , finely chopped
1/4 cup green peas , coarsely ground
2 tbsp finely chopped coriander (dhania)
1/2 tsp cumin seeds (jeera) , roasted and coarsely ground
salt to taste
1/2 tsp fruit salt
3 to 4 banana leaves (kele ka patta) ,
cut into 75 mm. (3") diameter circles
1 tsp oil for greasing

Method
  1. Combine the rice flour, urad dal flour, curds, green chillies, green peas, coriander, cumin seeds, salt and approx. ½ cup of water in a bowl. Mix well to make a thin batter of spreading consistency. Keep aside.
  2. Cut the banana leaves into circles using a 75 mm. (3") diameter cookie cutter.
  3. Apply a little oil on one side of each banana leaf and keep aside.
  4. Put 2 tbsp of the batter on the greased side of a banana leaf and spread it evenly to make a thin layer.
  5. Cover with another banana leaf with the greased side over the batter.
  6. Cook on a non-stick pan or a tava (griddle) using oil till light brown spots appear on the leaves and the panki in between peels off the leaf easily.
  7. Repeat with the remaining ingredients to make 9 more pankis. Serve immediately.

Handy tips

  1. If you do not have a cookie cutter for cutting the banana leaves into circles, cut them in squares and proceed as per the recipe.

Variation:

  1. You can use grated paneer, cabbage, carrots instead of green peas for the above recipe.
