This versatile, pale-green coloured soup can be served chilled in summer and hot in winter. The tinge of mint adds class to this otherwise simple soup. Its rich fibre content helps prevent obesity and controls blood sugar and cholesterol levels. This easy-to-make soup is an apt choice to satisfy sudden hunger pangs between meals.

Ingredients

2 tsp low fat butter
1/4 cup chopped onions
2 cups fresh green peas
salt and freshly ground black pepper powder to taste
1 cup milk

For The Garnish
2 tbsp finely chopped mint leaves (phudina)

Method
  1. Heat the butter in a non-stick pan, add the onions and sauté for a few minutes till they turn golden brown in colour, while stirring continuously.
  2. Add the green peas along with 2 cups of water and salt and bring it to a boil.
  3. Simmer for 15 minutes till the peas are cooked.
  4. Cool and blend in a mixer to a smooth purée.
  5. Add the salt, pepper and milk and bring to a boil.
  6. Serve hot topped with the mint leaves and carrots.
