Spring is a wonderful season, for it brings us rare treats such as green garlic ..... Green garlic has a milder flavour compared to dried ones, I have made use of this wonderful ingredient to make make delicious Green Garlic Mayonnaise.

Ingredients
2 eggs
1/2 tsp salt
1 tsp mustard (rai / sarson) powder
4 stalks roughly chopped green garlic (hara lehsun)
3 tsp lemon juice
2 tsp rice vinegar or white wine vinegar
1 1/4 cups vegetable oil
Method
    Method
  1. Whirl all the ingredients except oil in food processor with the metal blade.
  2. With machine running, add oil in thin steady stream through opening until all oil is completely incorporated.
  3. If the food pusher has that little hole , use it by pouring the oil into that, it works great.
  4. Store in an airtight container in the refrigerator for up to a week.
