Green Coconut Soup with Pearls recipe - How to make Green Coconut Soup with Pearls

Preparation Time:    Cooking Time:     Makes 1 serving

1/2 cup chopped spinach (palak) leaves
1/4 cup green peas , blanched and crushed
1/4 cup sago (sabudana) , soaked in water for 1 to 2 hours
1/2 tsp ginger (adrak) paste
1/8 tsp green chilli paste
1/2 tsp fennel seeds (saunf) powder
1/2 tsp ghee
1 tsp cornflour mixed with 2 1/2 cup coconut milk
salt and white pepper powder to taste
1/2 tsp sugar (optional)
  1. Blanch spinach leaves in boiling water for 2 minutes , drain refresh in ice cold water. Drain again and keep aside to cool.
  2. Blend in a mixer till smooth. Keep aside.
  3. Heat the ghee in a deep pan, add the ginger-chilli paste and sauté for half a minute.
  4. Add 2 cups water, sago, salt, fennel seeds powder, mix well and cook till the sago are cooked and transparent.
  5. Add the green peas, mix well and cook for a minute.
  6. Add the spinach puree, white pepper powder ,sugar and mix well.
  7. Add the coconut milk mixture and mix well.
  8. Cook till the soup becomes thick and creamy.
  9. Serve hot.
