Ingredients


3/4 cup besan (Bengal gram flour)
3/4 cup milk
5 tbsp melted ghee
1/2 to3/4 cup sugar
2 pinches saffron (kesar) strands
1/4 tsp cardamom (elaichi) powder
5 to 6 almonds (badam), blanched and sliced

Method
  1. Mix 2 tablespoons of the milk and 1 tablespoon of the ghee and add to the flour. Rub into the mixture thoroughly and leave for 10 minutes.
  2. Sieve the mixture using a coarse sieve.
  3. Heat the remaining ghee in a broad vessel, add the flour mixture and cook while stirring until slightly golden in colour.
  4. In another vessel, mix 1 teacup of water and the balance milk. Heat and add to the flour.
  5. Add the sugar and continue cooking and stirring until the ghee separates.
  6. Warm the saffron in a small vessel, add 2 teaspoons of milk and rub until the saffron dissloves. Add to the flour mixture.
  7. Put in a serving plate and sprinkle the cardamom powder and sliced almonds on top.
  8. Serve hot.
