Make a beginning with this simple goan curry. The coconut-based gravy imparts a delicious creamy flavour, making it a perfect accompaniment for hot, steamed rice. The paste is comprised of several aromatic spices, many of which are grown locally in the region, goa being well-known as a land of spices.

Ingredients


For The Paste
3 tsp oil
2 tsp poppy seeds (khus-khus)
1 stick cinnamon (dalchini)
1 clove (laung / lavang)
2 peppercorns (kalimirch)
2 tsp coriander (dhania) seeds
2 whole dry red chillies , broken into pieces
1 cup onion cubes
1 tbsp chopped garlic (lehsun)
3/4 cup freshly grated coconut

Other Ingredients
1/4 cup boiled green peas
2 cups potatoes , peeled and cubed
1/2 cup chopped tomatoes
1 tbsp tomato puree
salt to taste

Method
For the paste

  1. Put the oil in a small microwave safe bowl and microwave on high for 20 seconds.
  2. Add the poppy seeds, cinnamon, clove, peppercorns, coriander seeds and red chillies, mix well and microwave on high for 30 seconds.
  3. Add the onions and garlic, mix well and microwave on high for 2 minutes.
  4. Add the coconut, mix well and microwave on high for 5 minutes, stirring once in between after 2½ minutes. Keep aside to cool.
  5. Blend in a mixer to a smooth paste, using ¼ cup of water and keep aside.

How to proceed

  1. Combine the green peas and ½ cup of water in a microwave safe bowl and microwave on high for 3 minutes. Drain and keep aside.
  2. Add the potatoes along with ½ cup of water, mix well and microwave on high for 10 minutes, stirring once in between after 5 minutes.
  3. Add the tomatoes, green peas and tomato purée, mix well and microwave on high for 2 minutes.
  4. Serve immediately.
