CURDS

Description:
Curds are made by coagulating milk with the help of a fermenting agent. Usually a small quantity of curds are added to lukewarm milk. This promotes the growth of bacteria in the milk which coagulates and sets. Curds set quicker in warm weather than in cooler climates.
Use:
Curds hung in muslin cloth overnight and then sweetened with sugar and flavoured with cardamom and saffron make a classic Indian dessert called "Shrikhand. Curds can be eaten plain, sweetened with sugar or with fruits or thinned down with water to make Lassi or Chaas.
How to store:
