WHOLE WHEAT FLOUR

Description: Whole wheat flour is obtained by milling wheat kernels, where the entire seed is used except a portion of the bran.
How to select: Whole wheat flour is brownish in colour and coarser because it contains more bran.
Use: Many types of whole wheat flour breads are eaten in India and they are cooked fresh for each meal. Rotis are made every day whereas the more complicated breads like poories, parathas etc. are made on special occasions. Although white flour is also used to make rotis, it produces a sticky, leathery dough and therefore whole wheat flour is more popular.
How to store: Although whole wheat flour can be readily bought from supermarkets, people in India still buy whole wheat grains, clean them and take them to the nearest chakki or mill to make sure they get the freshest, purest flour possible.
Health benefits: Health conscious people believe that whole wheat flour is better because of the fibre it provides.
